Sandra Kay Bitting, 83, of Corpus Christi, Texas died on November 30, 2021 surrounded by loved
ones. She was born on September 9, 1938, in Tiskilwa, Illinois, the daughter of Joseph and Darlene (Ropp) Jackson. She married her high school sweetheart, Neil Bitting, on June 14, 1959. After spending most of their life in Illinois and Iowa, Neil and Sandy relocated their family to Texas in the early 1970's. One of her greatest joys was caring for her grandchildren and hosting relatives in Texas during the winter months.

She is survived by her husband of 62 years, Neil; three children Joellen (Kevin) Klohn of Kerrville, TX, Mark (Jeanene) Bitting of Corpus Christi, TX, and John (Corina) Bitting of Corpus Christi, TX; five grandchildren, Katie (Hunter) Miller, Emily (Josh) Shoemake, Charlie (Margarita) Bitting, Senior Airman E4 Ryan Rodriguez, and Ryanna Rodriguez; three great grandchildren, Judson, Bailey, and Wesley Shoemake; three brothers, Richard (Lousie), Bill, and Bob (Laura) Jackson; one sister, Joan Nelson; a special brother-in-law, Marv Buckman; a special niece, Susie Lanier; numerous brothers-in law and sisters-in law; and many, many nieces and nephews.

She was preceded in death by her parents, Joseph and Darlene Jackson, brother, Danny Joe Jackson; sisters, Mildred Dean and Ruth Buckman; parents-in-law, CF (Clarence Frederick) and Margaret Mary (Carper) Bitting; brother-in-law, Boyd Bitting; sister-in-law, Nancy Phillips; her beloved uncle Lt. Colonel Daniel "Uncle Danny" Ropp.

Cremation rites will be accorded. No services are planned at this time per her wishes. Memorials may be directed to your favorite charity of choice in her name.
