Elizabeth (Beth) Walker Offutt was greeted in Heaven by family and friends on Monday, September 4, 2023, surrounded in prayer with family and friends. She left this earth as she lived on it, gently and without fanfare.
Beth was born in New Orleans, Louisiana on October 31, 1945, to Virginia (Albert) Walker and Joseph Clay Walker Jr. Soon after, she and her family moved to Houston, Texas where she grew up. She graduated from North Texas State University with a degree in Microbiology and worked in the field for more than 30 years, spending much of her career at Memorial Hospital in Corpus Christi. During the beginning of the AIDS epidemic in the 80s, Beth worked closely with many agencies who ministered to HIV-positive patients who were isolated and shunned from much of society.
Most of Beth's life was spent quietly serving others. She loved to help others but did not like any spotlight or attention. Beth served loyally in the Altar Guild at St. Mark's Episcopal Church from its founding until her illness made her step down. She also loved helping with any other events held at the church. Beth also loved the outdoors. She was an avid bird watcher and would rather be out in Nature than indoors. One of her favorite hobbies was walking the trails at the Botanical Gardens or the Oso Bay Wetlands Preserve, where she would intently search for any wildlife she could find.
Beth is survived by her daughter Cindy Porterfield (husband Jay and beloved grandson Colin), brother Mayo Walker (Cheryl), and Sister-in-Law Ann Walker as well as niece Joanna and nephews Chris and Samuel. Beth leaves behind numerous friends and loved ones who miss her deeply but rejoice in her absence from illness and pain.
Beth's family would like to thank Aadi Hospice, River City Home Health (especially Rachel), and Cimarron Place Health and Rehabilitation Center for their attention throughout Beth's illness. The family would like to specifically thank Beth's friends who showered her with love, food, and attention. She valued each of you in her life, especially in her last months.
A Memorial Service for Beth will be held at St. Mark's Episcopal Church in Corpus Christi on Saturday, September 30, 2023 at 1:00 PM . In lieu of flowers, donations to St. Mark's Episcopal Church or the Audubon Society can be made on her behalf.
